Pro-Tips: How to Freeze (and Thaw) Like a Pro

The Golden Rules of Freezing

freezer. It will raise the internal temperature of the freezer, partially

freezer.

- Air
is the Enemy: Air is what causes freezer burn.

liquids (soups, chilis): Use freezer-safe bags. Pour the liquid in,
seal it almost all the way, and suck the remaining air out with a
straw (or just press it flat).
- For
solids (casseroles): Press a layer of plastic wrap directly onto the
surface of the food before putting the lid on.
- "Flash
Freeze" Small Items: For items like breakfast sandwiches, burger
patties, or muffins, don't just throw them in a bag. Lay them flat on a
baking sheet and freeze them solid (about 1-2 hours). Then, you can
toss them all into a freezer bag. They won't stick together in one giant
clump!
- Pack
Flat: Freeze soups, sauces, and ground meats flat in their bags. Once
frozen, you can "file" them like books. It's a "Freezer
Tetris" masterpiece that saves incredible amounts of space.
The Right Way to Thaw
For the best texture and food safety, follow this order:
- Best
Method (Slow & Steady): Thaw overnight in the refrigerator. This
is the gold standard for pretty much everything.
- Good
Method (In a Pinch): Place the sealed bag or container in a bowl of cold
water in the sink. Change the water every 30 minutes.
- Last
Resort (Use with Caution): The microwave. This is fine for soups or
stews, but it can make meats (like chicken) rubbery if you're not careful.
